How to make a real Apulian focaccia with onions

It’s very simple and yet tasty, I made it today and it didn’t take me long at all. The ingredients are very basic and easy to find.

Focaccia for 4 people:

  • 20g olive oil, plus extra for greasing
  • 600g bread flour
  • 30g fresh yeast or 3 teaspoon of dried instant one
  • 380g of water
  • 1 pinch sugar
  • 1 tsp salt



  • 40g extra virgin olive oil
  • 40g water
  • 1 and 1/2 tsp salt
  • 400g onions, chopped


Line a baking tray (approx. 40cm x 35cm) with baking paper and grease the baking paper with 2 tslp of olive oil. Set aside.

Place flour, yeast, water, 20g olive oil, sugar and salt into a bowl and mix everything until a dough is made. Cover with a kitchen cloth or cling film and leave it for about 1 hour.

Take the tray and place the dough on it making a rectangle. Stab it with a fork a few times all over.

Into another bowl place olive oil, water and salt and mix all together for a few minutes. Chop the onions and add them to the solution and mix.

Add the topping onto the focaccia dough and bake for about 30 minutes at 220C.
